Aboriginal Vegetable & Starch Cooking (CULI 1250)

The student will learn to prepare a wide assortment of vegetables, potatoes and rice by a variety of methods. The student will also develop pasta and egg cooking skills with the appropriate garnishes, sauces and accompaniments. The student will gain knowledge of First Nations plants. The student will accompany Elders on field trips to identify indigenous plants and herbs. Also included are vegetarian diets and the nutritional requirements associated with them.
