Michael Tittel

Department Head

Michael has held director positions in food & beverage, catering, human resources, sales & marketing, as well as serving as an assistant general manager and then general manager.  Michael’s employers have included Delta Hotels, Holiday Inns, University of Guelph, Best Western and private golf and country clubs. Michael is a member of the Club Managers Society, Canadian Association of Food Professionals and was the Vice President of the Vancouver Food and Beverage Directors Association.  Michael completed the Executive Cohort Program at VCC, receiving his Bachelors in Hospitality Management.  He is also a certified Food Service Professional.

Laurie Barnes


Laurie brings a combination of both practical expertise and theory-based knowledge.  At present, Laurie is the sales and marketing director for Poplar Grove Winery.  Laurie is a certified Red Seal Chef and a certified Sommelier.  She has both a Bachelor of Commerce from Royal Roads University and a Master’s in Business Administration from Simon Fraser University.  She has also completed the Adult Online Instructor Diploma Program and the Provincial Instructors Diploma.

Susan Boras


Susan brings over 25 years of hands-on hospitality industry experience to VCC.  Human resources, organizational development and leadership excellence continue to be Susan’s passions. She has worked for some of the largest hotel chains in the world including Marriott International, Westin and Fairmont hotels.  Susan has attained the Provincial Instructors Diploma, Bachelor of Hospitality Management, along with a Certification in Professional Coaching.

Shawna Broekhuizen


Shawna began her tourism career 20 years ago. Over that period, she has worked for hotel brands such as Four Seasons, Hilton, and Delta Resorts and Hotels.   In 2008 she was hired as general manager for The Beach Club Resort.  During her employment with the Beach Club Hotel, she was accepted into Royal Roads University in the Masters of Tourism program where she successfully completed her degree. She brings with her the knowledge of hotel operations as well as background working with destination management organizations.

Ben Brown


Ben has taught business math and economics since 1997 at VCC, as well as previously teaching statistics and business law. Ben has a master's degree (with honours) in economics from Simon Fraser University and a general arts diploma from Douglas College.

Mandy Davies


Mandy’s educational background is in fine arts and business administration. Mandy is currently an instructor at BCIT and UBC and has worked in many industries including retail sales, technology, education, administration, conference & workshop planning, website development and maintenance, private tutoring, and corporate training.

Sally Gibson


Sally is a certified Human Resource Professional (CHRP), specialized in program planning and evaluation, training and development, distributed learning, curriculum development, faculty development, and small business management. Sally has HR management experience, management development experience in both private and public business sectors, and importantly, within the hospitality and tourism industries.  Sally has completed a Bachelor of Education, Language Arts and English, Master of Education, Adult Education, and is currently working towards her Doctorate of Educational Leadership and Policy.

Lorraine Hyder


Lorraine has worked in the hospitality industry for over 25 years.  Her education includes Bachelor of Hospitality Management, Provincial Instructors Diploma, certified trainer/facilitator for the World Host Programs, certified trainer for Food Safe Level 1, certified Event Management programs and a variety of other professional certifications obtained through workshops and conferences in the hospitality industry.

Hassan Khayambashi


Hassan started teaching math when he was in grade 11 and after graduation he obtained a double major in math and software engineering.  Hassan’s education includes a Masters in Applied Math (Finance Applications), a Masters of Education majoring in Instructional Technologies, Provincial Instructor Diploma and has completed certificates in online instruction, software development, accounting, and is a Microsoft certified professional.  Hassan has over 30 years of teaching experience in math, computers and finance.

Paul Lau


Paul has worked in many different roles in the hospitality industry including resources planning manager, training officer, and a variety of roles opening Fairmont locations including catering manager, assistant food & beverage manager/director of catering, food & beverage controller and chief steward.  Paul has completed his Bachelor of Hospitality Management and Provincial Instructor Diploma and is certified in Advanced Tourism Study, Personnel Management, Customer Service, Train the Trainer and is a Foodsafe Instructor.

Karen Law


Karen teaches economics and hospitality law.  Karen received her Bachelors of Economics at Simon Fraser University and her Masters in Economics at the University of Waterloo.  Before moving into her career as a college instructor, Karen worked extensively in the financial industry as an investment advisor.

Mary Metzger


Mary began working at VCC in March, 2010.  She completed her Bachelor of Arts in History and Secondary Education from the College of William and Mary in Williamsburg, VA. She went on to obtain her Masters from University of Alabama at Birmingham in history and an MLIS (Library Sciences) from Rutgers University in New Jersey.  She has been teaching in post-secondary education since 1990.  Mary also has experience as a technical writer and training facilitator, and as an instructor in the School of Instructor Education working with learners in the Provincial Instructor Diploma Program at VCC.

Helen Orimaco-Pumatong


Helen started as a chef instructor and assistant instructor in the Culinary Arts and Hospitality Management departments in 2002.  Helen had the honour of being an integral part of various hotel openings including the Fairmont Pacific Rim in Vancouver and Westin Bear Mountain Resort and Spa in Victoria, BC.  Helen has also worked at the Fairmont Waterfront Hotel and finished her culinary apprenticeship at the Fairmont Airport (YVR) Hotel.  Helen’s education includes a Bachelor of Hospitality Management, the Culinary Arts Red Seal, Culinary Arts Certificate and Food and Beverage Management Certificate.

Monique Paassen

Assistant Department Head / Instructor

Monique gained international experience in a variety of key positions over her 10 years in the hospitality industry, reaching the position of assistant general manager at a resort in the Netherlands.  Monique received a Bachelor and a Masters Degree in International Hospitality and Tourism Management from the University in Montreux, Switzerland.  She also attained a Baccalaureate from Boston, Massachusetts; a diploma from the Swiss International Training Center in Neuchatel, Switzerland and a diploma in Hotel Management from the Hotel Institute in Montreux, Switzerland.

Al Petrone


Al Petrone has over 25 years of senior leadership experience with some of the world’s most recognized and respected hospitality brands, including Sheraton, W Hotels, Ritz Carlton, and Ian Shrager Hotels.  As the director of operations for W Hotels, Al was one of the key players in the launch and operation of one of the most exciting and successful brands in the hospitality industry.  His success at W Hotels led to Al’s promotion to Vice President and Brand Manager for Sheraton Hotels, where he oversaw 200 hotels in Starwood’s largest and best known brand. In more recent assignments, Al served as Vice President – Operations for Ian Schrager Hotels, Chief Marketing Officer for Noble House Hotels, Chief Marketing Officer for CruiseWest and CEO, Bristol Hospitality Group in Panama City, Panama, where he oversaw a diverse and growing portfolio of some of the best hotels in Latin America.

Awarded a full merit scholarship to Duke University’s Fuqua School of Business (MBA), Al graduated with honors in 1995.

Stephen Stafford


Stephen had extensive experience in hospitality with the Westin Bayshore Hotel, Keg Restaurants, the Old Spaghetti Factory and the Raintree Restaurants. He has worked in many front of house positions from server to bartender, bar manager, operations manager, service manager and restaurant and bar manager.  Stephen has an Instructor Diploma with a Post-Secondary Endorsement from the Province of British Columbia, Ministry of Advanced Education, a Diploma with Honours from the American Hotel and Motel Association, and a Bachelor of Hospitality Management from VCC.

Mike Tunnah


Mike has been teaching since 2006.  His areas of expertise include front desk, housekeeping and other rooms division related areas.  He holds a Bachelor of Business Administration and a Master’s of Education.  He has 15 years of hotel experience ranging from resorts to city centre properties working in limited-service hotels to 4-diamond chain hotels.  His emerging areas of interest include sustainability in hotels and trends in revenue management.

George Zakher


George joined the VCC faculty in 2015.  His extensive experience in hospitality leadership ranges from fine dining restarurants to long term care faciticities in Ontario, Alberta and British Columbia.  He currently manages at the Fairmont Waterfront ARC restaurant.  George completed his Food and Beverage Diploma from George Brown College and is also a member of the Canadian Society of Nutrition Management.  In 2014, he graduated from the University of Guelph with an MBA in Hospitality and Tourism.  George teaches in both the Diploma and Degree programs.
