Culinary Management

The Culinary Management Diploma is designed to meet the needs for those interested in securing a supervisor/management position, or for those who have entrepreneurial aspirations. Graduates of the Culinary Arts Management Diploma will have the fundamental skills required to effectively supervise kitchen/food operations, such as in restaurant or catering establishments.

Program Description

Building on the basic management skills acquired in the Culinary Arts Certificate program, students will acquire skills and knowledge in key disciplines required for modern management, through a combination of theoretical course work and hands on experience. This program consists of 15 weeks of full-time classroom and computer lab activities. This program has been designed to involve the students in a variety of learning environments and instructional delivery methods. Throughout the program the students will participate in lectures, seminars, small group discussions, role plays, labs, hotel and restaurant settings, and hotel simulation.

Admission Requirements

General

VCC welcomes applications from Canadian citizens and permanent residents.

Exceptions
Convention refugees as designated by the federal government;

Foreign live-in caregivers;

Individuals with work permits valid for at least one year, covering the duration of studies; or those with Approval in Principle letters from Citizenship and Immigration Canada;

Legal dependents of Canadian citizens or permanent residents (certain conditions apply);

Diplomats and their direct dependents;

VCC will require proof of citizenship, residency, diplomatic or refugee status. Please see VCC's policy relating to admission for non-citizens and non-residents for more information.


As Vancouver Community College is a post-secondary institution committed to educating adult learners, applicants should be 18 years of age or older or a graduate of a secondary school.

Program Specific

1) Grade 12 graduation with English 12 or equivalent

2) Successful completion of the VCC Culinary Arts Certificate or equivalent

As seats are limited, final selection of students is made by the Dean and Department Head

Recommended characteristics

- Ability to communicate effectively in oral and written English

- Good interpersonal skills

- Basic computer keyboarding skills

Additional Information

Credential: A VCC Diploma is awarded upon successful completion of the Culinary Arts Certificate plus the seven management courses listed below. Management courses must be completed within a two year time period.
